A creamy, low-carb pudding made with banana extract, almond milk, and whipped cream—decadent yet light.

  1. Add almond milk and whipping cream into the saucepan and place it over medium heat. Bring to a simmer.
  2. Add salt, sweetener, and egg yolks and combine well.
  3. Place half of the hot cream mixture into yolks and combine well.
  4. Place the mixture back in the saucepan and cook for 4 to 5 minutes.
  5. Remove from the heat.
  6. Add extracts and butter and combine well. Sprinkle with xanthan gum and place the mixture into the cups.
  7. Place it into the fridge for 1 hour.
  8. Serve!
