Add Sliced Mushrooms In A Single Layer (If Skillet Is Small, Cook In Batches To Avoid Overcrowding). Let Them Sear Undisturbed For 2–3 Minutes, Then Stir And Cook Another 3–4 Minutes Until Mushrooms Have Released Their Moisture And Are Browning.
  3. Add Garlic & Deglaze:: Stir In Minced Garlic And Cook 30 Seconds Until Fragrant. Pour In The Broth And Add Dried Thyme, Salt, And Pepper. Scrape Up Any Browned Bits (That’s Flavor) From The Bottom Of The Pan. Simmer For About 2 Minutes To Reduce The Liquid Slightly.
  4. Make it Creamy: Turn Heat To Low. Stir In The Greek Yogurt (Or Sour Cream/half-and-half). Mix It In Thoroughly To Create A Light Creamy Sauce. Do Not Boil After Adding Yogurt, To Prevent Curdling – Just Warm It Through. If The Sauce Seems Too Thick, Add A Splash Of The Reserved Pasta Cooking Water. If Too Thin, Let It Cook A Minute Longer. Taste And Adjust Seasoning.
