This Busy Day Soup is your weeknight dinner superhero. It’s hearty, packed with flavor, and comes together in under 40 minutes using simple pantry staples and freezer-friendly ingredients. With ground beef, veggies, and a savory tomato broth, it's comfort food made for chaos. Perfect for when time is short but hunger is real!

  1. In a large pot, brown 1 lb of ground beef over medium heat. Drain excess fat.
  2. Add 1 small chopped onion and 2 minced garlic cloves. Sauté until softened.
  3. Stir in:
  4. 1 can (14.5 oz) diced tomatoes
  5. 1 can (10.5 oz) condensed tomato soup
  6. 3 cups beef broth
  7. 1 tsp Italian seasoning
  8. Salt & pepper to taste
  9. Add 1½ cups frozen mixed vegetables and ¾ cup uncooked elbow macaroni (or any small pasta).
  10. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until pasta is tender.
  11. Serve warm with crusty bread or crackers!
