- Add 1 small chopped onion and 2 minced garlic cloves. Sauté until softened.
- Stir in:
- 1 can (14.5 oz) diced tomatoes
- 1 can (10.5 oz) condensed tomato soup
- 3 cups beef broth
- 1 tsp Italian seasoning
- Salt & pepper to taste
- Add 1½ cups frozen mixed vegetables and ¾ cup uncooked elbow macaroni (or any small pasta).
- Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until pasta is tender.
