  2. Add onion and ginger and cook for 4 minutes.
  3. Add spices, apples, and remaining veggies and cook until softened.
  4. Add veggie stock and simmer for 25 to 30 minutes.
  5. Transfer the mixture to the blender and pulse until smooth.
  6. Add coconut milk and stir well.
  7. Season with pepper and salt.
