A fried chicken sandwich is a classic comfort food that's easy to make at home. This recipe uses boneless chicken breasts, seasoned flour, and a brioche bun for a delicious sandwich.

  1. Cut the chicken breasts in half horizontally to create 4 thin cutlets.
  2. In a shallow bowl, combine the flour, salt, black pepper, paprika, and cayenne pepper.
  3. In another shallow bowl, whisk together the egg and buttermilk.
  4. Heat the vegetable oil in a deep fryer or large pot over medium heat.
  5. Dredge each chicken cutlet in the flour mixture, then dip it into the egg mixture, and then back into the flour mixture, making sure to coat each piece thoroughly.
  6. Fry the chicken cutlets in batches for 3-4 minutes or until golden brown and cooked through.
  7. Remove the chicken from the oil with a slotted spoon and drain on paper towels.
  8. Toast the brioche buns.
  9. To assemble the sandwiches, place a chicken cutlet on the bottom half of each bun.
  10. Top with lettuce, tomato, and mayonnaise.
  11. Add the top half of the bun and serve.
