  1. Marinate Cauliflower: Preheat The Oven To 425°f. In A Blender/Food Processor, Combine The Lime Juice, Chopped Chipotle Peppers, Honey, Minced Garlic, & Salt. Blend Until Mostly Smooth To Create A Spicy Marinade. In A Large Bowl, Toss The Cauliflower Florets With This Marinade, Making Sure To Coat All Pieces.
  2. Roast Cauliflower & Onion: Line A Baking Sheet With Foil Or Parchment For Easy Cleanup. Spread The Marinated Cauliflower Florets Out On The Sheet. Scatter The Sliced Red Onion Over The Cauliflower. Roast In The Preheated Oven For About 18–20 Minutes, Stirring Once Halfway Through, Until The Cauliflower Is Tender And Has Some Browned, Roasted Spots. Remove From Oven.
  3. Prepare Beans: While Cauliflower Roasts, Warm Black Beans In A Pot/Microwave. Refried Beans - Heat In A Saucepan With 1 Tbsp Water To Loosen If Needed.
  4. Warm Tortillas: Just Before Serving, Warm The Corn Tortillas So They’re Pliable. You Can Wrap Them In A Damp Paper Towel And Microwave For 30 Seconds, Or Heat Them Individually In A Dry Skillet For 20–30 Seconds Per Side.
  5. Assemble Tacos: For Each Taco, Take A Warm Corn Tortilla. Add A Spoonful Or Two Of Black Beans (Or Spread A Thin Layer Of Refried Beans) Down The Center. Top With A Generous Portion Of The Roasted Chipotle-lime Cauliflower And Onions. Sprinkle A Little Crumbled Queso Fresco Or Feta On Top. Add A Pinch Of Shredded Purple Cabbage For Crunch And Color. You Can Also Add A Slice Or Two Of Avocado For Healthy Fats. Finish With Cilantro And An Extra Squeeze Of Lime If Desired.
