  1. Cook Pasta & Chicken: Boil Whole-wheat Pasta Until Al Dente; Reserve ½ Cup Pasta Water, Then Drain. While It Cooks, Heat 1 Tbsp Olive Oil In A Skillet Over Medium-high. Season Chicken With Salt And Pepper, Sauté For 5–6 Mins Until Browned And Cooked Through. Set Chicken Aside.
  2. Make Sauce With Spinach: In The Same Pan, Heat 1 Tbsp Olive Oil. Sauté Garlic 30 Secs. Add Broth/wine + Lemon Zest & Juice To Deglaze. Simmer 1–2 Mins. Stir In Half-and-half (If Using) And Baby Spinach. Cook Until Wilted, 1–2 Mins.
  3. Combine & Serve: Return Chicken And Pasta To Skillet; Toss With Sauce. Stir In Parmesan To Melt. Add Pasta Water If Dry. Season To Taste. Serve In 4 Bowls, Garnish With Herbs And Extra Parmesan.
