  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine:
  3. 1½ cups uncooked orzo
  4. 2 cups cooked, shredded chicken
  5. 1 cup chopped spinach (fresh or thawed frozen)
  6. 1 cup shredded mozzarella
  7. ½ cup grated Parmesan
  8. 1½ cups chicken broth
  9. 1 cup milk (whole or 2%)
  10. 1 tsp garlic powder
  11. Salt & pepper to taste
  12. Pour mixture into a greased 9x13-inch baking dish.
  13. Cover with foil and bake for 25 minutes.
  14. Remove foil, stir gently, sprinkle extra cheese on top, and bake uncovered for another 10 minutes or until golden and bubbly.
  15. Let cool slightly before serving
