Zucchini & Sweet Potato Soup is a hearty, comforting blend of tender zucchini and sweet potatoes, simmered in a savory broth with spices, creating a creamy and nourishing bowl of soup.

  2. Add mint, nutmeg, and zucchini and simmer for 8 minutes.
  3. Add lemon juice and coconut milk and cook for 5 minutes. Season with pepper and salt.
  4. For sweet potato scoops: Preheat the oven to 400 degrees F.
  5. Cut the sweet potatoes into thick pieces.
  6. Add potatoes and olive oil to the bowl and toss to combine.
  7. Bake for 20 to 25 minutes.
