Add olive oil into the saucepan and place on medium flame.
Add minced onions and cook for four minutes. Then, add oregano, cumin, chili powder, and garlic and cook for one minute.
Add bouillon cubes, parsley, shredded turkey, salsa, diced tomatoes, water, and tomato soup and stir well. Bring to a boil. Then, lower the speed of the flame. Let simmer for five minutes. Add coriander, sour cream, corn, and black beans and simmer for 20 to 30 minutes.
Top with cilantro and sour cream.
Serve with chopped onion, tortilla chips and cheese.
