Directions
- Peel apple, carrot, and sweet potato. Then, cut it into small pieces.
- Add vegetable oil into the saucepan and heat it.
- Add onion and garlic and cook until softened.
- Add ginger, tomato paste, smoked paprika, ground coriander, and ground cumin,and cook for 2 minutes.
- Add water, vegetable stock, and split red lentils and boil for 20 to 25 minutes until softened.
- Add soup into the blender and blend until smooth.
- Sprinkle with pepper, salt, and lemon juice.
- Serve!
