Roasted Eggplant Meatballs are a delicious vegetarian alternative to traditional meatballs. Packed with savory flavors and roasted to perfection, they make a hearty and satisfying dish for any meal.

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Place the eggplant cubed onto the sheet pan and drizzle with olive oil. Season with salt. Bake for 20 minutes.
  3. Add it into the food processor and pulse until smooth. Allow it to cool for a few minutes.
  4. Add chopped basil, pepper, salt, egg, breadcrumb, parmesan cheese, garlic, and pureed eggplant into the bowl and combine well.
  5. Make the meatballs from the mixture and place them onto the sheet pan lined with parchment paper. Bake for 20 to 25 minutes.
  6. Add it to the saucepan with marinara and simmer for 5 minutes.
  7. Serve!
