- Step 1. Preheat the oven to 425*
- Step 2. Heat a skillet over medium high heat
- Step 3. Add Olive Oil to the skillet, add in the onions and green peppers and cook until soft, about 5 minutes, Drain the fat
- Step 4. Add the ground beef, crumbling as it cooks, when no longer pink, drain the fat
- Step 5. Stir in the Paprika, cumin, chili powder and salt and pepper
- Step 6. Place 6 Tortillas on the sheet pan, two on either side, one at each end
- Step 7. Be sure to overlap the tortillas
- Step 8. Place the cooked ground beef down the center of the tortillas in a rectangular shape
- Step 9. Add the onion and pepper over the top of the ground beef
- Step 10. Add the shredded Cheese to the top and then sprinkle the Green onions on top of the cheese
- Step 11. Fold the tortillas towards the center, beginning at the sides, then fold the ends up
- Step 12. Place one more tortilla on the top center to hold the tortillas down and to ensure the ingredients stay inside.
- Step 13. If necessary, you can place another sheet pan on top of the quesadilla on top to hold the fold tortilla in place
- Step 14. Bake in the preheated oven for 25 to 30 minutes. (if you used a second sheet pan to ho;d the tortillas in place, remove it after 10 minutes)
- Step 15. Slice the Quesadilla into rectangles and serve warm with Sour Cream and other choices of toppings.
