  1. Step 1. Preheat the oven to 425*
  2. Step 2. Heat a skillet over medium high heat
  3. Step 3. Add Olive Oil to the skillet, add in the onions and green peppers and cook until soft, about 5 minutes, Drain the fat
  4. Step 4. Add the ground beef, crumbling as it cooks, when no longer pink, drain the fat
  5. Step 5. Stir in the Paprika, cumin, chili powder and salt and pepper
  6. Step 6. Place 6 Tortillas on the sheet pan, two on either side, one at each end
  7. Step 7. Be sure to overlap the tortillas
  8. Step 8. Place the cooked ground beef down the center of the tortillas in a rectangular shape
  9. Step 9. Add the onion and pepper over the top of the ground beef
  10. Step 10. Add the shredded Cheese to the top and then sprinkle the Green onions on top of the cheese
  11. Step 11. Fold the tortillas towards the center, beginning at the sides, then fold the ends up
  12. Step 12. Place one more tortilla on the top center to hold the tortillas down and to ensure the ingredients stay inside.
  13. Step 13. If necessary, you can place another sheet pan on top of the quesadilla on top to hold the fold tortilla in place
  14. Step 14. Bake in the preheated oven for 25 to 30 minutes. (if you used a second sheet pan to ho;d the tortillas in place, remove it after 10 minutes)
  15. Step 15. Slice the Quesadilla into rectangles and serve warm with Sour Cream and other choices of toppings.
