A rich and velvety cream of tomato soup made with fresh tomatoes, cream, and seasonings for a comforting, smooth texture and vibrant flavor.

Ingredients

  1. Add olive oil to the saucepan and heat it.
  2. Add salt and leeks and cook for 3 to 5 minutes.
  3. Add garlic and cook for 30 seconds. Turn off heat.
  4. Transfer the cooked leeks and garlic to the medium plate.
  5. Add tomatoes to the blender and blend until pureed.
  6. Add half of pureed tomatoes to the saucepan.
  7. Add remaining pureed tomatoes, leeks, and garlic to the blender and blend until smooth.
  8. Add this mixture to the saucepan. Add coconut milk and broth and stir well. Simmer for 10 minutes.
  9. Enjoy!
