- Add olive oil to the saucepan and heat it.
- Add salt and leeks and cook for 3 to 5 minutes.
- Add garlic and cook for 30 seconds. Turn off heat.
- Transfer the cooked leeks and garlic to the medium plate.
- Add tomatoes to the blender and blend until pureed.
- Add half of pureed tomatoes to the saucepan.
- Add remaining pureed tomatoes, leeks, and garlic to the blender and blend until smooth.
- Add this mixture to the saucepan. Add coconut milk and broth and stir well. Simmer for 10 minutes.
