A velvety, dairy-free soup made with cauliflower, coconut milk, and nutritional yeast for a cheesy flavor.

Ingredients

Directions

  1. Add oil or ghee into the pot and place it over medium flame.
  2. Add onion and cook for 3 to 5 minutes.
  3. Add garlic and cook for 1 minute. Then, add cauliflower and sauté for 3 to 4
  4. minutes. Add bay leaf, broth, and thyme, and simmer for 15 to 20 minutes.
  5. Discard bay leaf and thyme.
  6. Add the soup into the blender and blend until smooth.
  7. Add nutritional yeast, lemon juice, and coconut milk and stir well. Season with pepper and salt.
  8. Serve!
