Directions
- Add oil or ghee into the pot and place it over medium flame.
- Add onion and cook for 3 to 5 minutes.
- Add garlic and cook for 1 minute. Then, add cauliflower and sauté for 3 to 4
- minutes. Add bay leaf, broth, and thyme, and simmer for 15 to 20 minutes.
- Discard bay leaf and thyme.
- Add the soup into the blender and blend until smooth.
- Add nutritional yeast, lemon juice, and coconut milk and stir well. Season with pepper and salt.
- Serve!
