Prick the sweet potato using a fork. Put it onto the damp paper towels and pop in the microwave on high for 8 minutes. Allow it to cool before cutting it in half. Scoop out the flesh.
Add salmon, spices, eggs, lemon juice, parsley, onion, and almond
meal to the bowl and mix well. Season with pepper and salt.
Add sweet potato flesh to the mixture. Shape the mixture into
patties. Put them on a baking sheet and in the fridge for 30 minutes.
Add oil to the frying pan and heat it. Add patties and cook for 5 to 6 minutes per side.
