Bell peppers stuffed with seasoned ground beef, rice, tomatoes, and cheese, baked until tender.

Ingredients

Directions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Coat the baking dish with non-stick cooking spray. Add bell pepper halves to the dish.
  3. Add oil to the pan and heat it. Add onion and beef and cook for 6 to 7 minutes.
  4. Then, add taco seasoning and diced tomatoes and simmer for a few minutes.
  5. Turn off the heat.
  6. Add half of the cheese and cooked rice and stir well.
  7. Add mixture into the bell pepper halves and top with remaining cheese. Bake for 20 to 25 minutes.
  8. Serve!
