- Preheat the oven to 375 degrees Fahrenheit.
- Coat the baking dish with non-stick cooking spray. Add bell pepper halves to the dish.
- Add oil to the pan and heat it. Add onion and beef and cook for 6 to 7 minutes.
- Then, add taco seasoning and diced tomatoes and simmer for a few minutes.
- Turn off the heat.
- Add half of the cheese and cooked rice and stir well.
- Add mixture into the bell pepper halves and top with remaining cheese. Bake for 20 to 25 minutes.
